1. The Lambeth revival

One thing that all our wedding cake experts agree on is that the Lambeth style cake is still going strong, but there’s  a romantic twist – heart-shaped Lambeth cakes are proving to be a popular wedding cake trend of 2025. With intricate piping, layered swirls, and retro romance, this style is pure drama with a nostalgic twist.

“Love is in the air and a lot of couples want white heart cakes with a touch of red,” says Becky from Fern & Rose. “Classic and simplistic but so dramatic!”

Samantha from Pretty Cake Company agrees: “Lambeth style cakes (with all the piping) are continuing to be popular as tiered cakes and also as single heart-shaped tiers. I’ve done this a few times and then provided extra canapé cakes to make up the extra cake that’s required.”

This two-pronged approach is something that Carly from Carly Cakes has also seen more of:  “It seems more popular now to have a smaller heart shape cutting cake with cupcakes as an added extra. And another thing I’ve been asked to do more of is two cakes side by side rather than tiered.”

And it’s a thumbs up from Pia at Vanilla Pod Bakery too: “We’re seeing Lambeth cakes in all shapes and sizes – from heart-shaped singles to more traditional tiers. It’s big news now, and it’s not going anywhere next year.”

2. Sugar flower resurgence

Sugar flowers are seeing a comeback in 2025, particularly for couples who want elegance with a hint of nostalgia.

“I’ve seen a resurgence in classic wedding cake styles with timeless sugar flowers which match the fresh florals,” says Samantha. “There have been some lovely bold florals this year.”

These delicate decorations are incredibly lifelike and blend beautifully with real blooms or they can shine on their own, especially when matched to the couple’s colour palette or bouquet.

3. Enchanting wild flowers

The structured floral arrangements of years gone by are making way for something a little looser, a little wilder, and utterly enchanting. Becky from Fern & Rose says: “It’s all about wild, free and flowing. Long gone are the tight bouquets – organic flower placement is the new go-to.”

Whether it’s fresh florals or edible blooms, this effortless look is perfect for country weddings, garden-inspired themes, or couples who want their cake to look as if it’s been plucked straight from a meadow.

4. Romantic piped flowers

Fresh and romantic, piped flowers are capturing hearts in 2025. These beautiful decorations are a little more rustic than sugar flowers, and are ideal for recreating the look of country cottage garden flowers such as peonies and roses.

“The last cake I made before maternity leave was a wildflower dream,” says Becky. “Such a simple design idea but oh my, it looks so romantic!”

This is a lovely option for spring and summer weddings, and a great way to bring your florals into the cake in a really romantic, yet naturalistic way.

5. Textured buttercream finishes

Buttercream isn’t budging from the top of the wedding cake wish list, but 2025 sees a move away from the classic semi-naked style. “I’m seeing a lot of couples wanting a textured finish,” says Becky. “Ripple vertical lines, horizontal lines, even a rough ‘slap-it-on’ kind of look. It really brings the cake to life.”

Samantha also notes a shift in buttercream trends: “More are opting for a smooth style or a different texture to the regular horizontal finish – I’ve had a few couples even requesting diagonal designs this year.”

Claire from Cake Daydreams adds: “Semi-naked cakes seem to have disappeared, but buttercream is still a firm favourite, especially with fresh flowers.”

6. Ganache galore

For couples who prefer a rich chocolate finish, ganache is always a popular choice.  “Ganache, ganache, ganache – I don’t think it’s going anywhere,” says Becky.

This indulgent cake finish is made from melted chocolate and cream and gives a finish that is sleek and modern. Dark chocolate ganache pairs beautifully with bold flavours like raspberry, while white chocolate ganache is incredibly versatile and can be used for any wedding cake colour and design.

7. Berry beautiful cakes

Looking for something sweet and seasonal? Berries are bursting onto the scene in a fresh new way. “I’ve just done a photoshoot at Blenheim Palace with a strawberry-themed cake,” says Samantha. “The florist mentioned that strawberries and other fruits and vegetables are popping up a lot in floral inspirations this year.”

Claire agrees that fruit is finding its way onto more wedding cakes in 2025, and says that some couples are even forgoing the traditional cake for a fruit-filled dessert. “A key trend I am finding is big desserts – a single tier filled with fresh fruit.”

Whether it’s a fresh fruit tart or a fresh and fruity cake decoration, berries add a pop of colour and a summery seasonal vibe to pudding!

8. Millefoglie marvels

Italian influence is making its mark with the arrival of the millefoglie wedding cake – a light and airy alternative with serious wow factor. “These are popping up here and there,” says Samantha. “I’ve yet to do one myself, but they’re certainly being talked about.”

Layers of puff pastry, creamy custard filling and fresh fruit – the traditional Italian wedding cake is a new trend that’s causing quite a stir!

9. Extra tall show-stoppers

When it comes to drama, nothing beats a cake that towers over the table – or even the groom! “Extra tall cakes with eight-plus tiers – that may be as tall as the groom – are an on-trend look,” says Samantha. “Often made with cake dummies for height, they offer amazing impact”

Carly has had requests to add bows to the middle of these tall cakes to heighten the dramatic appeal. Perfect for couples who want a centrepiece to remember – and a serious photo moment.

10. Statement sheet cakes

Last but not least, enter the statement sheet cake, ideal for large parties or couples who want to serve something different. “These are large sheet cakes that are decorated across a table,” says Samantha. “It’s a new trend and I’m excited to see it take off.”

Loosely based on a traybake idea, these large format cakes are fun and easy to share, and can be decorated however you want to make a serious style statement.
